Lambs are ready for your kitchen in October-November, and each lamb provides between 46-52 lbs of bone-in meat ("hanging weight"). Deboning the cuts results in about 23-26 lbs of meat. A full lamb share contains the following cuts and approximate weights (bone-in):
- 2 legs at 6 lbs each
- 14 lbs of front shoulder (center and blade cuts)
- 8 lbs of loin chops
- 2 lbs of rack
- 4 lbs of ribs
- 6 lbs of shank
- 1.5 lbs of stew meat & 1.5 lbs of ground
A full share constitutes one lamb, which occupies a space in your freezer of about two milk crates. CSA shareholders are entitled to all of the products of our lambs, including pelts, wool and organ meats. Pelts and unprocessed wool are sold at the cost of production. The cost of producing a washable lambskin pelt in 2009 was about $70. Unprocessed wool is available at $10 per sheep on a first come, first serve basis. Organ meats are sold at a nominal $1.00/lb. All meat cuts are USDA certified.
